The weather continues to turn colder and wetter, and with it comes the realization that it’s time to put away the summer clothes for good and settle in for cold days for the next few months. As I’ve mentioned before, this kind of weather makes me think of comfort foods, and one that always comes to mind is soup. I have several soup recipes posted on this site, but one thing that many of them lack is simplicity.

This is a very basic soup – meat, noodles, broth, and some seasonings. It’s also what we used to call “stupid simple” in that you can put it together almost without thinking and let one of our favorite time-savers – the slow cooker – do all the heavy lifting. But, its simplicity also give you a lot of options for changing it up and making different versions of it from the same base (think adding vegetables or other seasonings – check the notes at the bottom of the recipe card for ideas). What starts as one dish can turn into several, making you a hero for bringing all the variety into your family’s diet!

Instructions

  1. In a 6-7 quart slow cooker, add all ingredients except the egg noodles and stir to combine.

  2. Cook on High for 3-4 hours or on Low for 7-8 hours.

  3. About 15 minutes before the end of cooking, prepare the egg noodles according to package directions. Drain and add the noodles to the slow cooker, being careful when stirring them in as the cooker will be very full.

  4. Serve and enjoy!

Notes

  • Suggested changes:
    • Different cuts of beef (anything but ground beef)
    • Browning the meat - dredge the steak cubes in flour and brown in a skillet with olive oil before adding to the slow cooker (this will also thicken the soup a bit)
    • Vegetables - add vegetables such as peas, celery, carrots, or green beans
    • Wine - substitute one cup of red wine for one cup of beef broth
    • Different pastas - substitute other pasta shapes such as rotini, shells, or penne
