We’re a week away from Labor Day, which most people consider the “end of summer”. Well, by all indications summer doesn’t want to end anytime soon… highs over 100 most days, and rain so rare my yard hasn’t needed a mower in over a month.

So with the weather staying hot, I figured it was good to put up another recipe that keeps the kitchen from getting overheated. In this case, we’re using our old friend the slow cooker for a simple recipe that takes maybe 10 minutes to assemble and as little as 4 hours to cook, uses a few basic ingredients, and has a flavor that should satisfy all but the pickiest eaters. It’s also versatile in mixing and swapping ingredients to make it your own; I’ll list a few suggestions in the notes.

Description

An easy to make dinner using simple ingredients that will satisfy the whole family. Throw it in the slow cooker and relax - the kitchen stays cool and so will you.

  1. Place chicken in the bottom of a 6 quart or larger slow cooker. In a medium bowl combine soup, sour cream, onion, and garlic. Pour mixture evenly over the chicken, covering all the pieces.

  2. Cover and cook on High for 2 1/2 hours or Low for 5 hours. Remove the chicken and shred with two forks, then return the shredded chicken to the slow cooker and stir into the sauce to combine.

  3. In a small bowl combine crushed Ritz crackers, melted butter, and Italian seasoning, mixing well. Spread evenly on top of the mixture in the slow cooker.

  4. Cover and cook for 1 additional hour. Garnish with parsley while serving if desired.

Notes

  • Chicken breasts or thighs may be used
  • Cream of mushroom soup can be substituted for one of the cans of cream of chicken soup if desired
  • Vegetables can be added to this dish. Suggestions:
    • Peas (frozen - add 1 hour before the end of cooking; canned - add during the last 30 minutes of cooking)
    • Carrots (frozen - add 1 hour before the end of cooking; raw/sliced - add at the beginning of cooking)
    • Broccoli florets (frozen - add at the beginning of cooking; fresh/raw - blanch first, then add during the last hour of cooking)
  • Serving suggestions:
    • By itself
    • Over rice
    • Over mashed potatoes
