One Pot Mexi Beef And Corn Bake

A simple Tex-Mex style dish with lots of flavor and just a little heat so everyone can enjoy it.

Ingredients

Instructions

  1. In a large skillet, add the ground beef, onion, Creole seasoning, cumin, and chili powder. Cook until meat is browned.

  2. Add diced tomatoes, tomato sauce, and green chiles and mix together.

  3. Add rice, water, and salt and mix together.

  4. Bring mixture to a boil, then cover and reduce heat to low. Cook for 20 minutes or until rice is cooked, checking and adding more water if necessary.

  5. Remove cover. Add corn and salsa con queso and mix together.

  6. Top with shredded cheese and serve.
