Hot Chicken Salad French Bread Sandwiches

Since school is in full swing, I’ve pivoted a bit from my “beat the heat summer cooking” attempts into more of “quick dinners on a budget”… at least until it gets a little cooler.

So here’s the scene: everyone is going in every direction after school and work, and by the time they all converge at home it’s starting to get late. Oh, and everyone’s hungry. Sound familiar?

Here’s one option. This is an open-faced sandwich that’s simple, takes about 30 minutes to knock out, feeds a crowd, and uses very few ingredients. If you have some leftover chicken, it’s a perfect way to put it to use. The taste should satisfy everyone (even the picky eaters), and there’s room to change it up a bit if you’d like.

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper. Slice the French bread loaf lengthwise, laying the two halves cut-side up on the paper.

  2. In a large bowl combine the chicken, mayonnaise, sour cream, onions, parsley, garlic powder, and cheese, and stir until well blended. Spread the mixture evenly across both bread halves.

  3. Place the bread in the oven and cook 20-25 minutes or until the edges are lightly browned. Remove and allow to cool for 5 minutes. Cut each half into 8 slices before serving.

Notes

  • "Hot" in this case refers to the sandwich being served hot, not the level of spices.
  • The flavor can be changed up several ways:
    • Replace some or all of the sour cream with Ranch dressing, or add a packet of Ranch seasoning to the chicken mixture
    • Increase or decrease the garlic powder by 1/4 teaspoon
    • Try different cheese varieties; the sandwich on the recipe card used a blend of Colby and Monterey Jack
