Spread the meat mixture evenly on both halves of the bread loaf, making sure to spread it as close to the edges as possible. Combine the Cheddar and Pepper Jack cheeses, then spread evenly on top of the meat mixture, again getting as close to the edges as possible.
6 Place the bread back into the oven and cook for 10 minutes or until the cheese has melted. If desired, switch the oven to Broil and toast the top for 1-2 minutes before removing.
7 Let rest about 5 minutes before cutting and serving. Garnish with parsley if desired.
