When I came across this dish, I thought it would be a good one to try as it’s a simple recipe with only three ingredients and it takes only minutes to prepare. But there was just one problem: it didn’t have any measurements listed for any of the ingredients. Unlike my mom, who often would “wing it” and create dishes that didn’t exactly turn out the same every time, I like having clear instructions so I know how much to buy and not mess up the taste by adding too much or too little of something. So when I found this, I realized I had a challenge on my hands.

Challenge accepted.

I walked through the sketchy steps and photos and came up with a plan, then bought what I thought would be enough of each ingredient. Working with individual servings tends to make me a little more conscious of how much is going into each one, so I had a lot of numbers floating around in my head. I even created a diagram on the back of an envelope (go figure) showing how I assembled each ramekin. The worst part was the baking time, which was way off in the printed “recipe” (if it could be loosely called that). I finally worked that out too, and the result turned out better than I hoped.

(For those of you who are not big fans of meat or have family members who aren’t, this dish can be prepared meatless by swapping the type of ravioli used.)

Since the recipe source was so lacking in detail, I’m going to do something rare and claim this one as my own version.

Individual Ravioli Lasagna

Description

A quick, simple, individually-sized lasagna using layers of ravioli and marinara and topped with cheese. It can be made with or without meat to satisfy everyone around the table.

  1. Preheat oven to 350 F.

  2. Prepare each ramekin as follows:

    • Spread 2 tbsp of marinara sauce on the bottom of the ramekin
    • Place 2 raviolis in a single layer on top of the sauce
    • Repeat two more times for a total of three layers of marinara sauce and three layers of ravioli
    • Spread 3 tbsp of marinara sauce on top of the last layer of ravioli
    • Top with 1/4 cup of shredded Mozzarella cheese
  3. Bake for 30 minutes or until the cheese is golden brown and the dish is bubbly. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • The ramekins in the recipe photo are 8oz capacity, and are approximately 4-1/2 inches wide and 2 inches tall.
  • Refrigerated ravioli is preferred. If frozen ravioli is used, thaw it first before assembling the ramekins.
  • Any marinara sauce can be used
  • As written this dish uses ravioli filled with Italian sausage. For a meatless/vegetarian version, substitute with ravioli filled with cheese or spinach.
