Sometimes you want to get something on the table that doesn’t require a lot of prep work, and this is one of those kind of dishes. Consider this: you can put it together like I did using rotisserie chicken, pre-cooked bacon, frozen broccoli, jars of alfredo sauce, pre-shredded cheese, and frozen tater tots, and get it into the oven in a matter of minutes.
Of course, if you have more time or want to cut down on some of the cost you can cook the chicken and bacon, chop a head of broccoli, make the alfredo sauce from scratch, and shred blocks of cheese (the tater tots are still best to buy already made). I’m not going to judge.

Chicken Alfredo Tater Tot Casserole
Description
This is a dish that can be made as simply or as complex as you wish. You can use mostly pre-cooked and packaged ingredients, or cook them yourself depending on time and cost.

Preheat oven to 400 F. Spray the inside of a 9 x 13 casserole dish with nonstick cooking spray.

In a large bowl combine chicken, bacon, and broccoli. Add the alfredo sauce and stir to coat evenly. Add pepper, 1 cup of shredded Mozzarella cheese and all the Parmesan cheese, and mix thoroughly.

Pour the mixture into the casserole dish and spread evenly. Arrange the tater tots in a single layer on top of the mixture.

Bake for 35 minutes or until the tater tots begin to turn golden brown. Open the oven and sprinkle the remaining Mozzarella cheese on top. Return to the oven and cook another 10 minutes or until the cheese has melted and starting to brown. Remove from the oven and let rest 5 minutes. Garnish with parsley if desired when serving.

Notes
- The original recipe post called for rotisserie chicken. Substitute with cooked and shredded chicken breasts if desired.
- Precooked bacon can be used, or cook your own and chop before adding to the dish.
- Fresh chopped and blanched broccoli can be substituted for the frozen florets.
- Other vegetables can be substituted for the broccoli if desired.
- Premade or homemade alfredo sauce can be used.
