I had some plans to be away from the house today, so I wanted a dish I could either cook quickly in an Instant Pot or one I could throw into a slow cooker and let it work all day. The slow cooker won this time.
This recipe is very simple – chicken, potatoes, a few spices, and Parmesan cheese. It comes together in less than 10 minutes and you can let it cook all day if you want. The chicken does come out tender and not dried out, and the potatoes are almost falling apart, but its flavor is very mild. Making it again, I would probably substitute chicken thighs instead of breasts and add more seasoning, especially for the potatoes. I’ll leave those as suggestions in the recipe notes.

Slow Cooker Garlic Parmesan Chicken and Potatoes
Description
A very simple chicken and potatoes dish that can be tossed into a slow cooker if you've got other plans for the day and be ready for dinner when you return.

Place the quartered potatoes evenly across the bottom of a 5-6 quart slow cooker.

Coat both sides of each piece of chicken with olive oil, then season both sides with Italian seasoning, salt. pepper, and red pepper flakes (if using). Place the seasoned chicken on top of the potatoes.

Pour the chicken broth over the chicken. Sprinkle first the garlic and then the Parmesan cheese evenly over the chicken until the tops are coated.

Cook on Low for 6-8 hours or High for 3-4 hours. Remove the chicken and stir the potatoes and sauce.

Serve with a drizzle of the sauce over the chicken. Garnish with parsley if desired.
