Ingredients

Instructions

  1. Heat olive oil in a skillet with a tight-fitting cover over medium-high heat.

  2. Add onion, bell pepper, garlic, ground beef, dry mustard, chili powder, salt, and pepper to skillet. Sauté until the beef is no longer pink, breaking it up as it cooks.

  3. Add rice and cook for two minutes, allowing rice to absorb juices.

  4. Add tomato paste and cook for one minute.

  5. Add diced tomatoes with juice, water, and Worcestershire sauce. Stir to combine, cover and simmer for 20 minutes.

  6. Remove lid and fluff mixture with a fork. If the mixture is too wet, cook a few more minutes with the lid off.

  7. (Optional) Sprinkle cheese on top and replace cover for a few minutes to melt before serving.
