Adapted from 100kRecipes

Ingredients
  • 2 cups onion, chopped
  • 2 pounds lean ground beef
  • 28 ounces Kielbasa sausage, sliced into 1/2 inch pieces ((two 14oz packages))
  • 2 cloves garlic, minced
  • 4 medium baking potatoes, peeled and diced
  • 2 cans pinto beans, undrained (15 oz)
  • 2 cans peeled and diced tomatoes, drained (14.5 oz)
  • 1 can Ro*Tel diced tomatoes and green chiles (28 oz)
  • 24 ounces frozen mixed vegetables ((two 12 oz packages))
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 4 cups water
  • salt and pepper (to taste)
Instructions
  1. In a large skillet, sauté the onions over medium-high heat 3-4 minutes or until translucent. Add the ground beef and cook 6-8 minutes or until no longer pink, breaking the meat into crumbles while cooking. Add the sausage and cook 2-3 minutes or until lightly browned around the edges. Remove from heat and drain off any excess grease.

  2. In a very large stock pot add garlic, potatoes, tomatoes, Ro*Tel, pinto beans, frozen vegetables, cumin, chili powder, and water. Stir to combine. Add meat mixture and stir until well blended.

  3. Bring mixture to a boil. Reduce heat, cover, and simmer for one hour, stirring occasionally. Season with salt and pepper as desired.
