In a large skillet, sauté the onions over medium-high heat 3-4 minutes or until translucent. Add the ground beef and cook 6-8 minutes or until no longer pink, breaking the meat into crumbles while cooking. Add the sausage and cook 2-3 minutes or until lightly browned around the edges. Remove from heat and drain off any excess grease.
2 In a very large stock pot add garlic, potatoes, tomatoes, Ro*Tel, pinto beans, frozen vegetables, cumin, chili powder, and water. Stir to combine. Add meat mixture and stir until well blended.
3 Bring mixture to a boil. Reduce heat, cover, and simmer for one hour, stirring occasionally. Season with salt and pepper as desired.

Notes
- For a thicker stew, reduce water to 3 cups
- If 28 ounce cans of Ro*Tel are not available, three 10 ounce cans can be used
- If a spicier stew is desired:
- Increase amount of cumin and/or chili powder
- Add a dash of paprika
- Add chopped jalapeno peppers
- Use Ro*Tel "Hot" tomatoes with chilies
