Today is Super Bowl Sunday, and I’m sure everyone out there has their gameday snacks and appetizers and whatever else laid out days in advance. And so I wasn’t really planning to post anything today. As we used to say growing up, I don’t have a dog in that fight (i.e. I don’t have any preference for either contender in the Super Bowl), so I was just going to have a quiet evening of doing other stuff. But I still have to eat, right?

And so as I was scrolling through social media I came across a short reel posted by guy on Facebook who goes by the title “Your Barefoot Neighbor”. I’ve followed his postings for a while to get some ideas for dishes… he’s a published cook (two cookbooks out now and a third later this year), and his recipes are all geared toward foods that are quick, tasty, comforting, and sometimes downright fun (sometimes he seems to make stuff up as he goes and it comes out looking really good). The reel I found today was for this dish, which seemed like something simple to throw together and could work as an appetizer or as part of a full meal. This is one of those “on the fly” recipes he seemed to throw together, but it comes out really tasty. I’ll post the link to the video here; if it stops working, just look him up on Facebook.

Slow Cooker Honey Garlic Meatballs

An easy to make dish in a slow cooker using only a handful of ingredients. It can be served as an appetizer or as part of a larger meal.

  1. Place the frozen meatballs in the bottom of a 4 quart or larger slow cooker.

  2. In a medium bowl whisk together the ketchup, soy sauce, honey, garlic paste, and chili paste until smooth. Pour the mixture over the meatballs, coating them.

  3. Cover and cook on High for 2 hours or Low for 4 hours. Serve as-is or garnish with green onion or Sesame seeds if desired.
