It’s that time between Winter and Spring… the weather’s warming up, but there’s still the occasional “last blast” of cold every few days. I started looking for something “in between” as well – not ready to give up completely on soups and stews, but not ready to throw into major dinners either. This was a compromise – a simple chicken dish prepared in a slow cooker, and served over pasta. In fact, its name “Angel” comes from it being served over Angel Hair pasta – that’s it. The sauce is very tasty, but not as creamy when finished as I had hoped. I may need to play around with that another time.

Description

A very easy to make and tasty dish served over Angel Hair pasta, which is where it gets its name.

Instructions

  1. Place the chicken breasts in the bottom of a 4 quart or larger slow cooker.

  2. In a large bowl combine cream cheese, butter, chicken broth, cream of chicken soup, and Italian dressing mix. Whisk to blend together thoroughly.

  3. Pour mixture over chicken, covering thoroughly. Cook on Low for 4 to 6 hours.

  4. Cook pasta according to package directions. To serve, place a bed of pasta on a plate and top with a chicken breast. Spoon extra sauce over chicken as desired.

Notes

  • Substitutions:
    • Thin sliced chicken breasts (the recipe photo shows a full sized chicken breast)
    • Chicken tenders or thighs in place of the chicken breasts
    • Any "cream of" soup can be used in place of the cream of chicken soup.
  • The Italian dressing mix is a seasoning packet. Do not make the seasoning into actual Italian dressing!
  • Additional vegetables could be added to the slow cooker such as frozen broccoli to make a more complete meal
  • More servings are possible if the chicken is shredded after cooking. Additional pasta may be needed.
