Seven Can Chicken Taco Soup

This week I had midterm exams for my college courses, so I didn't have a lot of time to spend in finding and preparing food by any stretch. During a break in studying I came across this recipe for a soup that involved dumping seven cans of ingredients (and a few spices) into a pot and cooking it for 20 minutes, and said "that's perfect".

This soup is very mild - even with the addition of cumin and chili powder - so all the flavors really come through and will please even the pickiest eater. This gives you a lot of room to kick up the spices as much as you wish - I've included some suggestions at the bottom of the recipe card.

Ingredients
  • 1 can black beans, drained and rinsed (16 oz)
  • 1 can pinto beans, drained and rinsed (16 oz)
  • 1 can sweet corn, drained (15 oz)
  • 1 can chicken breast, drained and flaked (12.5 oz)
  • 1 can petite diced tomatoes (undrained) (14.5 oz)
  • 1 can green enchilada sauce (10 oz)
  • 1 can chicken broth (14.5 oz)
  • 1 envelope mild taco seasoning (1 oz)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powser
Instructions
  1. In a large soup pot combine all ingredients and stir well.

  2. Bring mixture to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally. Serve immediately.

  • This soup has a very mild taste. If a spicier result is desired:
    • Substitute red (hot) enchilada sauce
    • Substitute regular or hot taco seasoning
    • Increase amount of cumin/chili powder
    • Add sliced jalapeno peppers
