Ingredients
  • 1 tablespoon olive oil
  • 1 pound Kielbasa sausage, cut into 1/4" slices
  • 1 cup onion, finely chopped/diced
  • 2 cloves garlic, minced
  • 3 cups short pasta, uncooked (elbows, rotini, small shells, penne, gemelli, etc.)
  • 1 can Ro-Tel tomatoes with green chiles (10 oz.)
  • 1 1/2 cup milk
  • 3/4 cups chicken stock
  • 1 1/2 cup Colby Jack cheese, shredded
Instructions
  1. In a large skillet, heat olive oil over medium-high heat. Add sausage and onions and cook for about 5 minutes or until the onions are soft and the sausage has started to brown. Add garlic and cook an additional 1-2 minutes.

  2. Add pasta, tomatoes, milk, and chicken stock and stir to combine. Bring mixture to a boil, then reduce heat and cook for 8-10 minutes or until pasta is tender. Remove from heat.

  3. Add cheese and stir until well blended. Let stand 5 minutes for the sauce to thicken before serving.
