Description

A very old recipe, sort of like an early form of Shake 'n Bake only with Ritz crackers

Adapted from Sweet Little Bluebird

Ingredients
  • 4 chicken breasts, boneless skinless
  • 2 eggs, beaten
  • 1 cup crushed Ritz crackers or similar
  • 1/2 teaspoon garlic salt
  • ground black pepper to taste
  • 1/2 cup butter, cut into pieces
Instructions
  1. Trim excess fat from the chicken breasts.

  2. Preheat oven to 375 F. Spray a 9 x 13 casserole dish with cooking spray.

  3. Place beaten eggs in a shallow dish. In a second shallow dish combine crackers, garlic salt, and pepper, and stir to mix well. 

  4. Dip each chicken breast in the eggs to coat well, then dredge in the cracker mixture, making sure to coat all sides. Arrange breaded chicken side by side in the casserole dish. Top chicken evenly with pieces of butter.

  5. Bake 40 to 45 minutes or until the internal temperature of the chicken has reached 165 F as measured with a meat thermometer.
