If you grew up in the South or lived there any reasonable length of time, at some point you’ve probably had pimento cheese. And if you’ve been there more than a few years, you’ve probably had it a lot.

Although its roots actually go back to New England, it’s the southern U.S. that really made pimento cheese a household name. Families have their own recipes for it, passed down from one generation to the next. And at the annual Masters golf tournament in Augusta, Georgia, pimento cheese sandwiches are a rite of passage, as much as mint juleps are at the Kentucky Derby.

There are many ways of serving pimento cheese – sandwiches, snacking with crackers, topping a burger or sliders, and the list goes on. This one turns it into an appetizer or snack… or even a meal if you eat enough of them. You can use store-bought pimento cheese (as I did here) or you can make your own… maybe even use your family’s “secret recipe” if you have one. And if you’ve never had pimento cheese before, this is a fun way to give it a try.

Instructions

  1. Wrap the tortillas in a paper towel and microwave for 15 seconds; this will make them more pliable for rolling.

  2. Spread 4 oz of pimento cheese across each tortilla, covering the entire surface. Lay 2 oz of sliced ham evenly over the pimento cheese, covering it completely.

  3. Roll each tortilla firmly into a log shape, being careful not to squeeze out the pimento cheese. Wrap tightly in plastic wrap, twisting the ends to hold everything together.

  4. Refrigerate 30 minutes to allow the pimento cheese to firm up.

  5. Remove the plastic wrap from each log and trim the uneven ends. Cut each log into 5 pieces, each approximately 1 inch long. Turn each piece up on end before plating and serving.

Notes

  • Other meats can be substituted for the ham if desired. Suggestions: sliced beef, turkey, or chicken.
  • Homemade or store-bought pimento cheese can be used
  • Other tortilla wraps can be substituted such as spinach or tomato
  • The original recipe as posted called for 6 oz of pimento cheese per tortilla, but this made them difficult to roll up without cheese leaking out. Feel free to experiment with different amounts to find what works best for you.
