Ingredients
  • 1 1/2 pound ground beef
  • 1 small onion, chopped
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 can petite diced tomatoes (14.5 oz)
  • 1 can tomato sauce (15 oz)
  • 1 can green chiles, chopped (4 oz)
  • 2 cups long grain white rice
  • 2 cups water
  • 1 teaspoon salt
  • 1 can whole kernel sweet corn, drained (15 oz)
  • 1/2 cup salsa con queso
  • 1/2 cup Colby Jack cheese, shredded
Instructions
  1. In a large skillet, add the ground beef, onion, Creole seasoning, cumin, and chili powder. Cook until meat is browned.

  2. Add diced tomatoes, tomato sauce, and green chiles and mix together.

  3. Add rice, water, and salt and mix together.

  4. Bring mixture to a boil, then cover and reduce heat to low. Cook for 20 minutes or until rice is cooked, checking and adding more water if necessary.

  5. Remove cover. Add corn and salsa con queso and mix together.

  6. Top with shredded cheese and serve.

Notes
  • Rotel tomatoes with chiles can be substituted for the petite diced tomatoes and green chiles.
  • For extra heat, replace the mild tomatoes/chiles/Rotel with a "hotter" version, or serve with sliced jalapenos.
  • For a lower-calorie dish, omit the salsa con queso.
