Ingredients
  • 2 pounds lean ground beef
  • 1 medium onion, chopped
  • 1 clove garlic, finely chopped or minced
  • 1 teaspoon Creole seasoning
  • 3 cups beef stock
  • 2 cups long grain white rice, uncooked
  • 1 pound frozen broccoli florets
  • 1 can Ro-Tel diced tomatoes with green chiles (10 oz.)
  • 2 cups Cheddar or Colby Jack cheese, shredded
  • parsley (optional)
Instructions
  1. In a large skillet, add ground beef, onions, garlic, and Creole seasoning. Cook over medium-high heat until meat is browned, breaking it into crumbles as it cooks.

  2. Add beef stock, rice, broccoli, and tomatoes, and stir to combine.

  3. Bring mixture to a boil, then reduce heat to Low. Cover and simmer for 20 minutes. Do not lift the lid or stir during this time.

  4. After 20 minutes, stir the mixture and check the rice for doneness. If it is not done, add more water and cook a few minutes longer.

  5. Top with cheese, cover and allow the cheese to melt. Serve with a garnish of parsley if desired.
