Ingredients
  • 1 pound ground beef (extra lean)
  • 1 1/2 cup Mexican four-cheese blend, shredded
  • 1 taco seasoning packet (1 oz)
  • 1 cup long grain white rice (uncooked)
  • 1 cup frozen mixed vegetables (carrots, corn, peas)
  • 1 can petite diced tomatoes (14.5 oz)
  • 1 cup chunky salsa (medium)
  • 1 cup chicken broth
Instructions
  1. Preheat oven to 375 F. Spray a 9 x 13 casserole dish with nonstick cooking spray.

  2. Brown ground beef in a large nonstick skillet. Drain excess grease and return meat to skillet.

  3. Reserve 1 cup of cheese to use later. Add all remaining ingredients to the beef and mix thoroughly.

  4. Pour meat mixture into casserole dish and cover with aluminum foil.

  5. Place dish in oven and bake 40 to 50 minutes or until rice is tender. 

  6. Remove foil, sprinkle reserved cheese on top, and bake uncovered until cheese is melted.
