Ingredients
  • 1 1/2 pound boneless chuck roast, cut into small cubes
  • 3 tablespoons olive oil
  • 4 medium carrots, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • 8 cups beef or chicken broth
  • 1 cup pearl barley or hulled barley
Instructions
  1. Heat a large pot on high heat. Add the olive oil and beef and cook for 10 minutes, stirring occasionally, until the beef starts to brown.

  2. Reduce heat to medium and add carrots, onion, and garlic. Cook for 5 minutes.

  3. Add tomato paste, thyme, salt, and pepper, and mix well. Add broth and barley.

  4. Reduce heat to medium-low. Cover and cook 1 1/2 hours or until meat is very tender.

Notes
  • You can substitute ground beef for the chuck roast. Reduce cooking time to 1 hour.
