Description

Chicken with a different take on flavor using pineapple and spicy brown mustard.

Ingredients
  • 3 pounds boneless skinless chicken thighs (about 12)
  • salt and pepper to taste
  • 2 tablespoons butter, melted
  • 1/4 cup chicken broth
  • 1/4 cup spicy brown mustard
  • 1/4 cup honey
  • 1/2 teaspoon garlic powder
  • 2 cans crushed pineapple, undrained (8 oz. each)
  • 2 teaspoons paprika
Instructions
  1. Preheat oven to 400 F. Spray a shallow baking pan with nonstick cooking spray.

  2. Arrange chicken in a single layer on the baking pan. Season with salt and pepper.

  3. In a bowl combine melted butter, chicken broth, mustard, honey, garlic powder, and pineapple.

  4. Spoon the mixture evenly over the chicken and sprinkle paprika on top.

  5. Bake for 45 minutes or until chicken reaches an internal temperature of 180 F.
