Instructions

  1. In a soup pot over medium high heat, add ground beef, onion, garlic, and 1 tsp salt. Cook until meat is no longer pink, breaking it into crumbles as it cooks. Drain any excess grease.

  2. Add all remaining ingredients and stir to combine. Bring mixture to a boil, then reduce heat and simmer for at least 30 minutes or until the potatoes are cooked through.

Notes

  • This recipe can be changed to suit your individual tastes by adjusting the quantities and types of vegetables and pasta. The soup in the photo contains ditalini pasta (sometimes called "salad macaroni").
  • To help the potatoes cook through without getting mushy, cut them to roughly the size of the other vegetables (1/4"-1/2" cubes)
  • The finished soup is somewhat thick. If a thinner soup is desired, stir in hot water 1/2 cup at a time until the desired consistency is reached.
