It’s January, and it’s cold. We’ve had one winter blast already, and another one is due this week. What better to have to fight the cold than a meat-and-potatoes meal that sticks to your ribs and gives you that warm cozy feeling?

This dish fits that description pretty well. It’s got meat (ground pork) and potatoes, tied together with a light sauce and shredded cheese. There’s even breadcrumbs to give it a bit of crunch on top.

The photo on the recipe card doesn’t give it much justice; I think between altering the recipe to make 8 servings instead of 6 and using breadcrumbs on top, everything sort of turned more golden colored than the original recipe post I worked from. But the end result is the same: a hearty dish to fill up your family and keep them warm.

  1. Preheat oven to 375 F. Spray the inside of a 9 x 13 casserole dish with nonstick cooking spray.

  2. In a medium skillet add the pork, paprika, thyme, salt, and pepper, and cook over medium-high heat until no longer pink, breaking the meat into crumbles as it cooks. Remove the cooked meat from the skillet and set aside.

  3. In the same skillet, melt the butter. Add the onions and garlic and cook over medium heat 2-3 minutes or until softened. Sprinkle the flour over the onion mixture and stir to combine. Cook 1-2 minutes, then slowly whisk in the chicken broth and milk to avoid creating lumps. Continue whisking constantly 3-5 minutes or until the mixture thickens. Remove from heat.

  4. To assemble the casserole, arrange half of the potatoes in an even layer on the bottom of the casserole dish. Spoon half of the meat evenly on top of the potatoes. Spoon half of the sauce evenly on top of the meat, followed by sprinkling half of the cheese on top of the sauce. Repeat the layers of potatoes, meat, sauce, and cheese using the remaining half. Sprinkle the breadcrumbs evenly on top.

  5. Cover the dish with aluminum foil and bake for 40 minutes. Remove the foil, then bake another 10 minutes or until the dish is bubbling around the edges and the top is golden brown. Remove from the oven and let rest for 5 minutes before serving.

  • The breadcrumbs can be plain or flavored (Italian, garlic Parmesan, etc.)
  • Panko breadcrumbs can be substituted if desired
