It’s mid-February, and in Texas that means it’s cold… usually. Our weather this past week has been up and down, but we can always count on at least one extra cold snap… which we’re told will happen in a few days, with temperatures dropping in some areas to single digits. Brr…
So, why not prepare for the cold with a nice pot of hearty soup? And so we have this week’s selection. I don’t come across many dishes (and especially soups) using sausage, so when it does happen I put it on my “try it” list. This is a very simple recipe using ingredients you might already have in your freezer and pantry, and can be prepared in less than half an hour if you’re in a hurry. But I would suggest letting it simmer for a while if you can so the flavors can blend better. I’ve added in time to allow for that, but I’ll include a note in case you really need it fast.

Country Sausage Soup
Description
A simple but hearty soup with sausages, beans, and a rich broth. A great choice for warming up after a day out in the cold.

In a large cookpot or Dutch oven, cook the sausage over medium-high heat until no longer pink, breaking into crumbles as it cooks. Drain excess grease.

Add chicken broth, tomatoes, thyme, rosemary, and pepper to the sausage and stir to combine. Bring the mixture to a boil.

Add the beans and reduce heat to a low simmer. Cover and cook for 30-35 minutes, stirring occasionally. Remove from heat and serve immediately.

Notes
- Any bulk sausage can be used:
- Mild, spicy, or hot breakfast sausage
- Mild, sweet, or hot Italian sausage (if in links, remove from casings)
- Turkey or chicken sausage (if in links, remove from casings)
- Cooking time can be reduced if in a hurry. After adding the beans, reduce heat to medium and cook for 5 minutes or until beans are heated through, then serve. The longer cooking time is preferred to allow the flavors to blend together better.
