A creative way to use leftover pork chops or pork roast

Ingredients
  • 5 tablespoons butter, divided
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 2 celery ribs, chopped
  • 2 garlic cloves, minced
  • 2 cups cooked pork chops or pork loin, cubed
  • 1 can condensed cream of chicken soup (10.5 oz)
  • 16 ounces sour cream
  • 8 ounces Colby Jack cheese, shredded
  • 1 teaspoon Creole seasoning
  • 1 bag hashbrowns (32 oz.)
  • 1 can Garbanzo beans, drained and chopped (15 oz., optional)
  • 2 cups plain corn flakes cereal
  • 1/2 cup Parmesan cheese, grated or shredded
Instructions
  1. Preheat oven to 350 F.

  2. In a large skillet, heat 1 tsp of butter over medium-high heat. Add onion, pepper, celery, and garlic, and sauté for 3-5 minutes. Add cubed pork and mix well. Cook until the pork is heated through, then remove from heat.

  3. In a large bowl, add soup, sour cream, Colby Jack cheese, Creole seasoning, and beans (if used), and stir until well combined. Fold in hashbrowns.

  4. Add the pork mixture to the hashbrown mixture, and stir to combine.

  5. Pour the mixture into one 9 x 13 or two 8 x 8 casserole dishes.

  6. Melt the remaining butter. In a bowl, combine melted butter, corn flakes, and Parmesan cheese and mix well. Sprinkle mixture evenly over the top of the casserole dish(es).

  7. Bake for 25-30 minutes.
