I was scrolling through my posted recipes wondering what might be good to try this week, and I noticed I haven’t done anything with pork chops in a very long time. Pork loin, pork tenderloin, sure… but not pork chops. I have to go back three years to find my most recent dish. So, I figured it’s time to give them another try.
I came across this recipe and it seemed to have all the right things going for it – tasty ingredients (honey, Dijon mustard, etc.) and it uses pork chops, so I thought “why not?” And so we have it here.
<Start Rant> The only thing I might change is the cheese – why in the world most of the recipes I find call for topping everything with Mozzarella is beyond me. It’s great when first serving fresh from cooking, but if you have leftovers this stuff takes on the consistency of beef jerky and no amount of heating will ever soften it up.. I’d much rather use something else like Cheddar or Monterey Jack, or simply not top it with cheese until you’re actually ready to serve it. <End Rant>

Cheesy Honey Mustard Pork Chops

A simple oven-baked dish combining pork chops with a tangy homemade honey mustard sauce and topped with gooey cheese.

Preheat oven to 375 F.

Heat oil in a large skillet over medium-high heat. Season both sides of the pork chops with lemon pepper. Place pork chops in the hot skillet and sear each side for 1-2 minutes or until slightly browned. Remove from the skillet and arrange in a 9 x 13 casserole dish.

In a bowl combine honey, Dijon mustard, lemon juice, and paprika, stirring until well blended. Pour the mixture over the pork chops, coating them evenly.

Place the casserole dish in the oven and bake for 20 minutes. Remove from oven, top each pork chop with chopped bacon and shredded cheese, then return to the oven for about 5 minutes or until cheese has melted. Remove and let rest 5 minutes before serving.

Notes
- If leftovers are anticipated, be aware that Mozzarella cheese does not reheat very well. Consider holding the topping until ready to serve, then add as the chops are being reheated.
