To make each roll, start by placing a wrap on a cutting board so that it looks like a diamond with the corners facing left-right-up-down. Place 3-4 tablespoons of the meat mixture along the bottom third of the wrap. Wet the edges of the wrap with water, then fold the corner nearest you up and over the filling, tucking the point in, Fold the left and right corners toward the center, then continue rolling forward tightly until the edges are sealed. Repeat for the remaining wraps.
4 Make an egg wash by mixing one egg in a small bowl with water. Brush the egg wash over the rolls, covering both sides.
5 Lightly spray the air fryer basket with a nonstick cooking spray. Place the egg rolls in the basket, being careful not to crowd them (you will probably need to prepare them in batches). Cook at 400 F for 8 minutes, turning them halfway through cooking.
