Most of the time I try to cook recipes from scratch – separate ingredients, seasonings, etc. But every now and then I don’t mind using a shortcut or two. Sometimes you want to get something on the table quickly, or use as few brain cells as possible, or both. There are only four ingredients in this dish, one of which is pre-packaged, and takes less than 30 minutes to pull together. This would be a great choice for a busy weeknight, and almost anyone could prepare this with very little effort… so I guess that qualifies as “both”.

Smoked Sausage and Broccoli Rice Skillet
Description
A quick one-skillet meal that has only four ingredients that can be knocked out in less than 30 minutes. A great choice for a busy weeknight or when there is no desire to think about what to cook for dinner. Sourced from a user-posted reel on Facebook.

In a medium to large skillet, brown the sausage over medium-high heat (about 5 minutes)

Add water to the skillet and bring to a boil. Add the pouches of rice and the broccoli, and stir to combine evenly.

Cover and reduce heat. Simmer about 10 minutes or until most of the liquid is absorbed by the rice. Remove from heat.

Stir to mix the rice and broccoli. Sprinkle the cheese on top of the mixture, then cover and let sit for 2-3 minutes or until the cheese has melted. Serve immediately.

Notes
- Frozen broccoli should be thawed first before adding to the skillet.
- If using fresh broccoli, blanch it in boiling water 2-3 minutes before adding to the skillet
- Any type of smoked sausage can be used - Kielbasa, all-beef sausage, Andouille, chicken sausage, etc.
- Substituting a non-fat cheese will reduce total fat to 33.2g (43% RDA) and saturated fat to 12.1g (61% RDA) per serving
