It's the day before I return to my college courses for another semester, so there's a lot going on - making sure I can log into my classes, checking all my books and supplies, reviewing the syllabus for each class, and psyching myself up for another run through a new school year. The last thing I really wanted to spend a lot of time worrying about was dinner. I found this dish that has only six ingredients and uses a "set it and forget it" slow cooker... perfect!
I'll tell you now that while this has a good flavor it does come out a little dry to my tastes. Put some salsa and sour cream on the side, and that should take care of it :)

Quick and easy to make with only 6 ingredients in a slow cooker. Great for those days when you don't have time to hover over a stove.

In a skillet, brown the ground beef, breaking it into crumbs as it cooks. Add the garlic toward the end of the cooking time.
In a large bowl combine cooked beef, taco seasoning, hashbrowns, soup, and 1 cup of cheese. Mix until well blended. Pour mixture into a lightly greased 6-quart slow cooker and spread evenly across the bottom. Top with remaining cheese.
Cover and cook on Low for 4 to 4-1/2 hours or on High for 2 to 2-1/2 hours. Serve immediately.
