Description

A classic "quick bread" that is easy to make for any occasion.

Ingredients
  • 2 cups whole wheat flour (stone ground preferred)
  • 1 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 3/4 cup buttermilk
Instructions
  1. Preheat oven to 375 F. Grease a 10 inch cast iron skillet, or grease and lightly flour a medium baking sheet.

  2. In a large bowl, combine flour, baking soda, and salt, and whisk together. Add buttermilk and combine using a spatula until just mixed. If too dry to combine completely, add more buttermilk one teaspoon at a time until the dough reaches a soft and sticky consistency.

  3. Coat hands with flour and shape dough into a dome-shaped loaf. Place in the skillet or baking sheet.

  4. Using a sharp knife, cut a cross shape 1/2 inch deep across the top of the loaf.

  5. Bake 40-45 minutes or until bread is a golden brown color. Remove from the oven, transfer to a wire rack, and allow to cool completely before slicing.

Notes
  • The cross shape cut into the top of the loaf is a traditional step in homage to St. Patrick, who is said to have made this bread frequently.
