Description

Based on traditional recipes, this hearty stew is rich in flavor and a welcome addition to your St. Patrick's Day festivities.

Adapted from The Daring Gourmet

Ingredients
  • 4 lb beef chuck roast, cut into 1 inch cubes
  • 1/2 cup all purpose flour
  • 12 oz bacon, diced
  • 4 cup yellow onions, chopped
  • 6 garlic cloves, minced
  • 32 oz Guinness Extra Stout (2 pint bottles or cans)
  • 6 cup potatoes, cut into 1 inch pieces (Yukon Gold recommended)
  • 3 cup carrots, cut into 1/2 inch pieces
  • 2 cup celery, cut into 1/2 inch pieces
  • 2 cup parsnips, cut into 1/2 inch pieces
  • 2 cup beef broth
  • 4 tbsp Worcestershire sauce
  • 6 oz tomato paste
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 4 bay leaves
  • salt and pepper to taste
Instructions
  1. In a large mixing bowl, add beef and season with salt and pepper. Add flour and toss to coat evenly. Set aside.

  2. In a very large cookpot or Dutch oven, fry the bacon over medium-high heat. When cooked, use a slotted spoon to remove the bacon and set aside, leaving the drippings in the pot.

  3. Working in batches, place the flour-coated beef into the pot and brown on all sides. Transfer the cooked beef to a plate while working on the next batch.

  4. Add the onions to the pot and cook 10 minutes or until slightly browned, adding more oil if needed. Add garlic and cook for one minute.

  5. Add the Guinness to the pot to deglaze the bottom, then bring to a boil for 2 minutes. Add potatoes, carrots, celery, and parsnip and mix well.

  6. Return the bacon and beef to the pot. Add in all remaining ingredients and stir to combine.

  7. Bring mixture to a boil, then reduce heat to Low and cover. Simmer for 2 hours, stirring occasionally. Season with salt and pepper to taste.
