Add the Guinness to the pot to deglaze the bottom, then bring to a boil for 2 minutes. Add potatoes, carrots, celery, and parsnip and mix well.
6 Return the bacon and beef to the pot. Add in all remaining ingredients and stir to combine.
7 Bring mixture to a boil, then reduce heat to Low and cover. Simmer for 2 hours, stirring occasionally. Season with salt and pepper to taste.
