Add the beef broth to the bottom of the Instant Pot. Add the beef cubes, then sprinkle one envelope of Ranch seasoning over the beef. Add the onions, potatoes, and carrots in layers, then sprinkle the second envelope of Ranch seasoning on top.
2 Secure the lid on the Instant Pot and turn the vent valve to Sealing. Set the controls to Pressure Cook on High Pressure for 25 minutes.
3 After cooking has finished, allow the Instant Pot to natural release for 15 minutes, then turn the vent valve to Venting to release the remaining pressure. Carefully open the lid and remove the beef and vegetables using a slotted spoon, leaving the juices. Press Cancel, then Saute to heat up the juices. Mix the corn starch in water to make a slurry, then add to the juices and stir 5-10 minutes to thicken. Drizzle the thickened sauce over the meat and vegetables when serving.
