Here's an idea for your next cookout - pork ribs cooked in an Instant Pot with Dr. Pepper, then finished off on the grill or in the oven with a coating of your favorite barbecue sauce mixed with more Dr. Pepper. The meat is tender, juicy, and falling-off-the-bone delicious!

Ingredients
  • 3 pounds boneless country-style pork ribs
  • 2 cans Dr. Pepper (12 oz.)
  • 3/4 cups barbecue sauce
Instructions
  1. Place the ribs in a single layer in the bottom of the Instant Pot. Do not overlap pieces. Pour one can of Dr. Pepper on top of the ribs.

  2. Place the lid on the Instant Pot and lock it, and make sure the venting valve is set to "Pressure". Set the controls to Pressure Cook on High for 40 minutes. After cooking is finished, allow the Instant Pot to naturally release for 15 minutes.

  3. While the pressure is releasing, prepare either the oven or grill:

    • If using an oven, preheat to 400 F and use a rack placed over a baking sheet
    • If using a grill, bring up to at least 350 F
  4. In a bowl, combine barbecue sauce with 1/2 cup of Dr. Pepper and mix thoroughly.

  5. Release remaining pressure and remove lid. Carefully lift out ribs (meat will be very tender and start to fall apart) and transfer to either the oven or the grill. Baste liberally with barbecue sauce and cook for 10 minutes, then flip, baste with more sauce, and cook another 10 minutes. Serve with additional sauce for dipping.
