It’s December… that time of year for holiday festivities, over-indulgent meals, decadent desserts, and increasing waistlines. But at its heart is the desire to spend time with family and share old memories while making new ones. And one memory many of us have is coming home to warm, filling meals after a long cold day.
In other words, it’s comfort food season.
And nothing says “comfort food” better than a pot of stew or soup. I’ve posted many different recipes for soups and stews here, and every one of them is a keeper in my book. This one is no different. It’s filled with very down-to-earth ingredients, it’s simple to make, and it feeds a good-sized crew. Pair it up with some warm bread and you have a perfect memory to add to the ones you love to share.

Ingredients
Instructions
-
In a large cookpot or Dutch oven, heat olive oil over medium-high heat. Add onion and celery and cook until the onion is softened, about 3-5 minutes. Add garlic and cook 30-60 seconds or until fragrant.
-
Add ground beef to the pot and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease.
-
Sprinkle flour over the meat mixture and cook for 1-2 minutes, constantly stirring. Add the tomato paste and continue stirring. Add a small amount of the beef broth to deglaze the bottom of the pot, scraping up any brown bits using a wooden spoon.
-
Add the remaining beef broth, Worcestershire sauce, Italian seasoning, potatoes, and carrots, and stir to combine. Bring to a boil, then reduce heat to a high simmer and cover, with the lid slightly ajar. Cook for approximately 30 minutes, stirring occasionally, until the potatoes and carrots are tender.
-
Add the frozen peas and stir to combine. Cook another 5 minutes to allow the peas to warm before serving. Season with salt and pepper if desired.
