It’s March… for north Texas it means the worst of winter is over, and the days should start to get warmer… as it leads up to storm season. Nope, we don’t get any breaks here.
It also means I’m going to move away from mostly comfort foods for now, although you may see one show up every now and then. This time I was wanting something simple that could be cooked in a single skillet. Well, this almost made it; I did have to boil the pasta separately, but everything else fit in that one skillet. This dish is a basic Alfredo sauce combined with ground beef and pasta – nothing fancy. And sometimes that’s all you want for dinner. It comes together in about 30 minutes, making it a great choice for a busy weeknight as well.

Ground Beef Alfredo Pasta

Prepare fettuccini according to package directions. Drain and set aside.

In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook 8-10 minutes or until browned, breaking into crumbles as it cooks. Drain off excess grease. Remove cooked beef from skillet and set aside.

Add onion to the skillet and cook until softened, 2-4 minutes. Add garlic and cook an addition 30-60 seconds. Add heavy cream, milk, garlic powder, and onion powder, and simmer over medium heat until slightly thickened, about 3-4 minutes. Add Parmesan cheese and continue stirring until thickened and smooth, another 4-5 minutes. Taste and add salt and pepper if desired.

Add ground beef back to the skillet and stir until combined with the sauce. Add cooked pasta to the skillet, mixing until coated in sauce. Serve immediately, garnishing with chopped parsley if desired.

Notes
- Ground chicken or turkey can be substituted for the ground beef.
- Any pasta could be used. Suggestions: spaghetti, penne, rigatoni, farfalle (bowties).
