(10/1/2023) To recognize the 5th anniversary of Mike Tries a New Recipe, I have updated this recipe with a couple of minor tweaks including increasing the amounts of two ingredients (chicken and hot sauce) and adjusting the serving size to 2 cups from 1-1/2 cups to yield 12 servings from a 6-quart slow cooker (this is in line with similar all-in-one meals as they are typically served with no side dishes),

Description

An easier-to-make version of an old family favorite comfort food. Perfect for cool days when everyone's busy - just put everything in a slow cooker and let it do the work.

Ingredients
  • 1 pound barbecued pork, chopped or pulled
  • 1 pound barbecued beef, chopped or pulled
  • 1 pound cooked white chicken meat, chopped
  • 1 cup white or yellow onion, chopped
  • 3/4 cups ketchup
  • 2 cans petite diced tomatoes (14 oz each)
  • 2 cans cream style corn (14 oz each)
  • 2 cans whole kernel sweet corn, drained (14 oz each)
  • 1 can diced new potatoes, drained and rinsed (14 oz)
  • 1 can baby butter beans or lima beans, drained and rinsed (14 oz)
  • 1 teaspoon hot sauce
  • 2 tablespoons vinegar
  • 1/4 teaspoon ground black pepper
Instructions
  1. Combine all ingredients in a 6 quart or larger slow cooker. Cook on low for 8 hours.

Notes
  • This recipe will completely fill a 6 quart slow cooker. It can be easily cut in half if needed.
  • The canned items are what make this recipe “easy.” If you wish, you can always substitute freshly prepared ingredients.
  • The stew may have a weaker or stronger barbecue flavor depending on whether the beef and pork are obtained “dry” or in sauce. If an even stronger flavor is desired, replace the ketchup with your favorite barbecue sauce.
  • If stew gets too thick while cooking, stir in 1/2 cup of hot water at a time until desired consistency is reached.
