Crazy Good Casserole

A really creamy, hearty blend of chicken, cheese and pasta topped with bacon... and who doesn't love bacon?

This recipe is one of the reasons why I started this website. The original was posted on a site called Recipe-Me.com, but when I tried to retrieve it I found it had been removed. I found another copy of it on Feminologie.com, so they get the credit for its source.

Description

A really creamy, hearty blend of chicken, cheese and pasta topped with bacon... and who doesn't love bacon?

Ingredients
  • 16 ounces spiral pasta (uncooked)
  • 6 bacon strips
  • 4-5 boneless skinless chicken breasts, cut into bite size pieces
  • 2 cans condensed cream of chicken soup (10.75 oz)
  • 2 cups Monterey Jack cheese, shredded
  • 1 tablespoon garlic powder
  • salt and pepper to taste
Instructions
  1. Preheat oven to 400 F. Spray a 9 x 13 casserole dish with nonstick cooking spray.

  2. Prepare pasta in a cookpot according to package directions.

  3. In a pan, cook the bacon and remove to drain on a paper towel when done. Do not discard drippings.

  4. In the same pan, cook the chicken in the bacon drippings. Add garlic powder, salt, and pepper to taste.

  5. Drain pasta and return to the cookpot. Add cooked chicken, soup, and 1 cup of shredded cheese, and mix together.

  6. Pour mixture into casserole dish. Crumble and sprinkle bacon on top, followed by the remaining cheese.

  7. Place dish in the oven and bake for 20 minutes or until the cheese melts and the top begins to brown.
