Add butter to the skillet and continue over medium heat. When the butter has melted, add the mushrooms and cook for 1-2 minutes, stirring frequently. Sprinkle the flour over the mushrooms and mix together. Continue cooking for another 2 minutes, still stirring frequently. Slowly stir in the chicken broth, scraping up any brown bits off the bottom of the skillet.
5 Bring the mixture to a simmer and cook for approximately 5 minutes or until it thickens into a gravy, stirring occasionally. Taste and add salt or pepper as desired.
6 Add the chicken and any juices from the plate back into the skillet. Turn the chicken to coat both sides with gravy. Cover and reduce heat to medium-low for 5 minutes to warm through. Remove from heat and let rest 5 minutes before serving.

Notes
- If thin sliced chicken breasts are not available at the grocer, use two chicken breasts and slice lengthwise, making two thinner "fillets" from each breast. There should be a total of four pieces.
- If sliced mushrooms are not available, purchase whole mushrooms but take care not to slice them too thin or they will fall apart when cooked.
