Cheesy Honey Mustard Chicken

Give this a try - chicken seasoned with lemon pepper and baked in a honey and Dijon mustard sauce spiced with paprika for a bit of heat, then topped with bacon and cheese. Ingredients
  • 4 boneless skinless chicken breasts
  • lemon pepper (to taste)
  • 3/4 cups honey
  • 1/2 cup Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon paprika
  • 1/4 cup cooked and chopped bacon
  • 1 cup shredded Mozzarella cheese
Instructions
  1. Preheat oven to 375 F. Spray a 9 x 13 casserole dish with nonstick cooking spray.

  2. Season both sides of the chicken breasts with lemon pepper, then place in the casserole dish.

  3. In a medium bowl combine honey, mustard, lemon juice, and paprika, and mix until well blended. Pour mixture over chicken, coating all pieces evenly.

  4. Bake uncovered for 20-25 minutes or until a meat thermometer inserted into the thickest part of the chicken reaches 165 F. 

  5. Remove dish from oven. Top each chicken breast with 1 tablespoon of bacon and 1/4 cup of cheese. Return to oven and cook until the cheese has melted and is starting to brown (about 10 minutes). Let rest 5 minutes before serving.
