Preheat oven to 375 F. In a large bowl combine chicken, eggs, onions, breadcrumbs, barbecue sauce, and 1 cup of cheese. Using your hands, mix thoroughly.
2 Line a rimmed baking sheet with parchment paper. Pour the meat mixture onto the sheet and shape into a rectangular loaf. Top with remaining cheese.
3 Bake for approximately 50 minutes or until the meatloaf reaches an internal temperature of 180 F. Remove from oven and allow to rest 5 minutes before serving.

Notes
- Any flavor of barbecue sauce can be used.
- The original recipe called for scallions instead of green onions. Use whichever is available at your local grocer or market.
- Serving suggestion: Traditionally, meatloaf is served with ketchup on the side. Instead, provide extra barbecue sauce on the side.
