The kids around here are getting ready to go back to school, but it’s still summer… so it’s still hot. And we still don’t want to have to heat up the kitchen if we can avoid it. But you have to feed the kids, right?
So, give this dish a try. It’s simple and basic with only five main ingredients, which is a snap to prepare. The Instant Pot cooks it quickly, and even if you use a tough cut of beef it’ll come out melting in your mouth. The only drawback my taste testers found was there seemed to be only a hint of the Ranch seasoning in each bite, which makes it somewhat bland. So, be prepared to add some extra seasoning of your choice when serving.

Instant Pot Ranch Beef Tips with Carrots and Potatoes
Description
An old fashioned meat-and-potatoes kind of dish that cooks quickly in an Instant Pot. There's just a hint of Ranch taste, so plenty of room for adding other seasonings if desired.

Add the beef broth to the bottom of the Instant Pot. Add the beef cubes, then sprinkle one envelope of Ranch seasoning over the beef. Add the onions, potatoes, and carrots in layers, then sprinkle the second envelope of Ranch seasoning on top.

Secure the lid on the Instant Pot and turn the vent valve to Sealing. Set the controls to Pressure Cook on High Pressure for 25 minutes.

After cooking has finished, allow the Instant Pot to natural release for 15 minutes, then turn the vent valve to Venting to release the remaining pressure. Carefully open the lid and remove the beef and vegetables using a slotted spoon, leaving the juices. Press Cancel, then Saute to heat up the juices. Mix the corn starch in water to make a slurry, then add to the juices and stir 5-10 minutes to thicken. Drizzle the thickened sauce over the meat and vegetables when serving.
