Happy New Year! If you’re like me, you’re probably worn out from all the festive foods of the holiday season, and ready to settle down with some simple, hearty meals that don’t take a lot of time or effort to make. If that’s you, then I have just the thing to get you back on the simple track.

This dish takes only minutes to prepare, and everything is cooked in one pot — or in this case a Dutch oven. Ever since I got mine for Christmas two years ago I’ve been finding more and more reasons to use it. I’m looking at recipes now that I made years ago to see if they would be even better if made in one. But not today…

This meal is simple – chicken, potatoes, and a creamy sauce flavored with everyone’s favorite Ranch seasoning. I did substitute chicken thighs for the original chicken breasts, which I think gives it a better taste overall. But, I have a small confession to make: I accidentally used spicy Ranch seasoning (I didn’t know there was such a thing), so while the chicken was juicy and fork tender and the potatoes were perfectly cooked, the overall taste was more of a southwestern style that I wasn’t expecting. So if you want your dinner to have more of a kick, I’d highly recommend it!

Dutch Oven Creamy Ranch Chicken and Potatoes

A very easy to make one-pot meal that gets back to basics - chicken and potatoes - in a creamy Ranch flavored sauce.

  1. Preheat oven to 375 F. On the stovetop, heat olive oil in a 6 quart or larger Dutch oven over medium high heat until hot. Season chicken on both sides with onion and garlic powder, then sear in the hot oil for 3-4 minutes per side or until lightly browned (the chicken will not be completely cooked through). Remove from the Dutch oven and set aside.

  2. Add chicken broth, heavy cream, and Ranch seasoning to the Dutch oven and whisk together until smooth, scraping up any brown bits off the bottom of the pot. Add the potatoes, turning to coat all sides. Lay the chicken on top of the potatoes.

  3. Cover and place in the oven. Cook for 30-40 minutes or until the chicken is done and the potatoes are softened. Remove from the oven. Taste the sauce and season with salt and pepper if desired. Serve immediately, garnishing with chopped parsley if desired.
