One Pot Spaghetti

It’s Christmas week, and if you’re like me you are trying to balance cooking “regular” dinners with preparing for Christmas dinner (kinda like Thanksgiving last month). Ideally, you’d like to keep the regular stuff at a minimum while you’re working on the big meal, but you still want to give your family something that’s tasty and filling.

I think I have the answer here. This dish is super simple to make in about an hour, cooks in a single pot (I chose my Dutch oven, but a regular cookpot will work too), uses ingredients you might already have on hand, and who doesn’t like spaghetti? And if you do have any leftovers from it they’ll take away from any additional cooking you’ll have to do before the big day – wins all around!

I did make one small change from the original recipe. It called for three cups of beef broth and one cup of water; I used four cups of broth and no water to amp up the flavor, which is mostly absorbed into the spaghetti noodles as they cook.

A quick and easy dish that conveniently cooks in a single pot. A great choice for those nights when you need something the whole family will enjoy but don't have a lot of time (or patience) to make.

  1. Heat a 6 quart or larger cookpot or Dutch oven over medium-high heat until hot. Add ground beef and onion, cooking 7-10 minutes or until the meat is browned and the onions are translucent, breaking the meat into crumbles as it cooks. Drain excess grease.

  2. Add garlic and cook 30-60 seconds or until fragrant. Add beef broth, tomato sauce, diced tomatoes, Italian seasoning, salt, onion powder, and pepper, and stir until combined. Heat to a simmer, then cover and cook for 15 minutes, stirring occasionally.

  3. Add uncooked spaghetti, pressing it into the sauce until covered. Cover and cook an additional 15 minutes, stirring frequently to ensure the spaghetti doesn't stick together.

  4. Remove from heat and stir until evenly combined. Let rest 5-10 minutes before serving.

Notes

  • Other pastas can be substituted if desired. Suggestions:
    • penne
    • angel hair
    • farfalle (bowties)
    • fettuccine
    • rotini
    • linguine
    • shells
  • For a flavor twist, replace one pound of ground beef with one pound of Italian sausage
  • Leftovers may become thick and difficult to serve. Mix in water in small amounts until the desired consistency is reached.
